mango and fennel salad with fennel frond & ginger pesto

Yesterday in her Yoga for Women’s Health class, Lillah Schwarz commented on how the increased amount of rain (currently Asheville has gotten 51 inches of rain for the year, we usually get 47 inches total for the entire year. And yes, we still have 4 months to go…) has made everyone a little soggy. She recommended increasing ginger, fennel and tumeric in our diets to help combat the “wetness” in our joints.

And coincidentally enough, I’ve been loving this salad from Food52 this summer.  Simple yet completely satisfying, the pairing of fennel and mango with the ginger dressing is perfect for summer weather, even if your summer weather is awfully rainy.

    I’m eager to see what the recipe really is. I’ve been improvising on it after having it in Missouri.

      Koni, I’m finding that this salad really turns on its ingredients. Since it is so simple, your mango and fennel need to be just right in terms of ripeness for this salad to really sing.
